Fresh Apple Orange Sultana Cake: Bake with your children!

This delicious recipe could not be any easier and to take away any slight feelings of guilt you may have eating cake, it’s full of fresh fruit and a whole heap of Fibre! You can’t beat home cooked treats over additive, colour and preservative laden shop bought junk! I made this cake yesterday with my 7 year old daughter and the only involvement I had was heating the butter and dealing with the oven. Get your kids into the kitchen and have some baking fun!!

2 large apples.. washed, cored and chopped (I don’t peel mine, extra Fibre is important)
1 cup sugar (brown is better but white is fine)
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon or allspice
1/2 cup melted butter
1 egg
1 cup sultanas or raisins (which ever you prefer.. cranberries also work well)
Peel of 1 large orange grated finely

In a large bowl add the apple and sugar and mix well. Leave to stand for a few minutes. Add egg, orange peel, melted butter and stir well. Add flour and all other dry ingredients along with the sultanas. Give the mix a good stir to make sure everything is mixed in well.

You can cook this batter as muffins, in a cake tin or as a loaf. The cake or loaf will be cooked at 350 (180) for approx 1 hour. Stick a knife into the middle, if it comes out clean its cooked, if its wet cook for a further 15 minutes. For muffins cook on safe temperature for approx 20 minutes. Enjoy 🙂

In the last few years, Lucy has opened many Learning and Brain Training Centres and, as always, has only the children's vested interest above all else which is why her centres have proven to be successful so far. Dr. Gad Elbeheri BA, MA, PhD Dr. Gad Elbeheri obtained his PhD from the University of Durham, UK in 2004 and his main research interests are cross-linguistic studies of developmental dyslexia and its manifestations in both English and Arabic. An applied linguist, Dr. Elbeheri worked for a number of prestigious organisations which include the British Foreign & Commonwealth Office in London, before he moved to Kuwait where he worked as both an Expert and the Technical Director of the Early Learning Challenges & Disability Project, United Nation Development Programme and he also worked as the Executive Director of the Centre for Child Evaluation & Teaching: The premier learning centre in Kuwait which combines research and practice on specific learning disabilities across the Arab World. Dr. Elbeheri is a Board Member of the International Dyslexia Association and an Editorial Board Member of Dyslexia: An International Journal of Research & Practice. Dr. Elbeheri publishes in English & Arabic and is a regular speaker at international conferences.
